I am only able to water on odd days. I am wanting to add another schedule for the end of the day when it is very hot out. Am I able to create 2 flex schedules?

No. You can run a flex and a fixed, but if you run a fixed on top of a flex, it will record that moisture and may cause the flex schedule to skip a normal run.
What kind of plants are you watering where you need an afternoon schedule to run?

And are you in Texas or somewhere that is being hit with an unusual heat wave and so this is a temporary thing watering extra in the evening?
