Not sure if I need to wire the transformer to the 24 vac ± along with the sensor and ground wire. And if so does the transformer just hang on the side?

Just follow these steps: Installing Rachio 3
Disconnect the sensor and mark the wires, but don’t worry about them now. Disconnect and mark your station wires. You won’t need anything else from this controller.
