When looking at the graph and scrolling over to the right, the WEather Information is cut off, could we look into “freezing” that pane like an excel spreadsheet.

That way when you scroll, the weather information is not cutoff? See screenshot. Look at the left hand side where the weather information is.

I reported the same issue while using Google Chrome. The current fix that I use is to Enter Fullscreen in the meantime.
